You can make it all year long with your favorite fresh fruit, but it’s ideal in the summertime when you can add in more variety of seasonal fruit. With a final drizzle of some Citrus Mint Dressing it’s the perfect side dish, afternoon snack or even a dessert.

Rainbow Fruit Salad

A rainbow mix of fresh seasonal fruit dressed in a very light citrus mint dressing. A summertime MUST!
Ingredients
- FOR THE FRUIT:
- 2 cups strawberries
- 2 cups mango (approx 2)
- 1 cup kiwi (approx 4)
- 1 cup green and/or red grapes
- 1 cup blueberries
- 1 cup blackberries
- FOR THE CITRUS MINT DRESSING:
- 1 teaspoon lime zest
- 1 tablespoon lime juice
- 2 tablespoons fresh orange juice
- 1 tablespoon honey (or more to taste)
- 1 tablespoon fresh mint, minced
- NOTE: You can change the variety of the fresh fruit you use. You will need approximately 7-8 cups of fruit.
Directions
- Step 1 PREPARE THE FRUIT: Dice all the fruit (except the black berries and blue berries). Add to a large bowl. Cover and let chill in the refrigerator until ready to serve.
- Step 2 PREPARE THE DRESSING: Add all the dressing ingredients into a small bowl and mix well.
- Step 3 ASSEMBLE THE SALAD:When ready to serve drizzle dressing over fruit and stir to coat. Serve.
