Couscous with Pine Nuts

The perfect couscous recipe with the perfect texture. Flavored with chicken stock, shallots and fresh parsley.
Ingredients
- 4 tablespoons unsalted butter
- 3-4 chopped shallots (3/4 cups)
- 2 cups chicken stock
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1-1/2 cups couscous
- 1/2 cup toasted pine nuts (pignolis)
- 2 tablespoons fresh flat-leaf parsley, chopped
Directions
- Step 1 Toast pine nuts by placing them in a dry sauté pan over medium heat. Toss often for about 5-10 minutes until lightly brown. Transfer to a plate. Set aside and let cool.
- Step 2 In a large saucepan melt the butter. Add chopped shallots and cook over medium-low heat for about 3 minutes (or until shallots are softened and translucent).
- Step 3 Add chicken stock, salt, pepper and bring to a boil. (NOTE: If you want a vegetarian option use vegetable stock.) Once it boils turn the heat off.
- Step 4 Add the couscous and stir to combine. Cover the pan and set aside for 10 minutes.
- Step 5 Take lid off, loosen the couscous up with a fork. Add the toasted pine nuts and chopped parsley. Mix gently.
- Step 6 Serve warm or at room temperature.
