This recipe was actually discovered by my teenage daughters. I guess they felt my banana bread recipe (which often is baked into muffins) wasn’t healthy enough (haha!) so they found this nutritious (and delicious) recipe that’s sugar-free, gluten-free and dairy-free. I must admit I was reluctant at first. I mean how can you bake muffins with just 5 ingredients…especially these 5 particular ingredients: bananas, rolled oats, eggs, maple syrup and baking soda. I assure you though, this 5-ingredient Banana Oatmeal Muffin recipe is really really good, addicting even. I find myself eating at least 2 muffins straight out of the oven. I really have to control myself from eating any more.

5-ingredient Banana Oatmeal Muffins
My kids prefer these muffins over any other. It's a kids favorite and mom approved!
Ingredients
- 3 ripe bananas
- 2 cups old-fashioned rolled oats (use gluten-free oats for gluten-free muffins)
- 2 eggs
- 1/3 cup pure maple syrup
- 1 teaspoon baking soda
Directions
- Step 1 Preheat oven to 176°C (375°F).
- Step 2 Add all 5 ingredients into a blender and blend until smooth.
- Step 3 Fill muffin liners with batter. No need to leave room at the top. These muffins have a small controlled rise.
- Step 4 OPTIONAL: You can garnish the top with a few granola pieces. Totally optional.
- Step 5 Bake for about 14 minutes (baking times vary depending on the oven).
- Step 6 Enjoy warm right out of the oven, or later at room temperature.
