A bit of an oxymoron, a Cucumber Sandwich, but the combination of sliced crisp cucumbers layered in between a delicious blend of herbed cream cheese and sliced sandwich bread really delivers the perfect harmony of taste and texture. It’s a real treat if you’re like me and prefer a lighter flair for a midday meal.
Using fresh herbs to season the cream cheese is essential in this recipe. It not only adds amazing flavor, eliminating the need to add too many other ingredients into the sandwich, but it allows the cucumbers to be used in its raw state for crunch and freshness in every single bite.

Cucumber Sandwich
A light, crisp and refreshing sandwich that's deliciously prepared with fresh herbed cream cheese and as much cucumber slices as you want.
Ingredients
- HERBED CREAM CHEESE INGREDIENTS:
- 230g (8oz) cream cheese
- 60g (3 tablespoons) Greek yogurt
- 20g (0.7oz) fresh dill, finely chopped
- 20g (0.7oz) fresh chives, finely chopped
- 7g (0.3oz) fresh parsley, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- SANDWICH INGREDIENTS:
- 8-10 slices of of sandwich bread
- 1 cucumber, thinly sliced
Directions
- Step 1 Add all 7 Herbed Cream Cheese ingredients into a medium bowl. Stir until well blended. Taste and season with more salt if needed. Set aside.
- Step 2 To assemble the sandwiches, set 2 slices of bread on a cutting board. Spread some herbed cream cheese on both slices of bread. Add a layer of cucumber slices to one of the bread slices. Close the sandwich with the other bread slice. Cut in half and enjoy. Repeat to make more sandwiches.
- Step 3 TIP: You can make the herbed cream cheese spread a day or 2 in advance. It keeps well in an airtight container in the refrigerator.
